Immune Boosting Rainbow Veggie Soup

Eating fruits and vegetables of different colors boosts your immune system and your brain health. When you take care of your brain health, you're taking care of your gut health which impacts your entire body.
The different colors represent different phytonutrients to help keep all of our systems healthy and working properly.
Red soaks up damaging free radicals.
Orange promotes healthy joints.
Greens boost our immune system.
Purples fight inflammation.

Ingredients:
2 cloves garlic, minced
1 tbsp of ginger, minced
4 1/4 cups of vegetable broth
1/2 red onion
3 carrots
3 celery stalks, diced
3 carrots, diced
1 cup of diced tomatoes
1 cup red cabbage
4 cups broccoli flortets
2 cups of kale
Half of a lemon, juiced
1/4 tsp. cinnamon
1 tsp. turmeric
Pinch of cayenne pepper
Salt and pepper

Instructions
Sauté 1/2 red onion and 2 cloves garlic in 1/4 cup broth till soft
Add celery, carrots, tomatoes, and minced ginger. Sauté for 3 minutes.
Add turmeric, cinnamon, a pinch of cayenne, salt, pepper, 4 cups veggie broth and 2 cups water. Cook 10 minutes.
Add broccoli florets, kale, and red cabbage. Cook for a few minutes.
Add lemon juice.
